Hey everyone. So recently, Ive been on a little “detox.” I have wanted to do one of these for a while , specifically after I got back from all the craziness that was my SXSW experience. So now that I have a little free time because I have finished up all my classes (hooray!) So when my darling roommate June asked if I would go to Hot Yoga with her last Saturday, I said yes. We went to one of Nashville’s newer Hot Yoga studios in Brentwood, called Fahrenheit Yoga, which was about a 15 minute drive. The studio itself is really incredible and they have a great 10 days for $10 deal for new yogis. So I signed up for the 10 day package and decided to embark on a little detox for myself.
I started with a salad mix from Trader Joe’s that is around 3 or 4 dollars. The whole bag has only 30 calories in it!
The salad already looks so pretty and green no? I used a large popcorn bowl to mix the ingredients. I usually do this with salads because I like to mix them a lot and using a small bowl can often create a big mess!
Next, I sliced a ripe tomato from Kroger. I used a technique my old roommate, Natalie taught me. Basically you make vertical cuts in one half of the tomato from the top of the tomato to the bottom. Then, holding the tomato from the top and bottom, carefully cut the tomato into smaller pieces. Then cut right in the middle up and down to release all the diced pieces. It was a revelation when she taught me. let me tell you.
Here are all the pieces. You can cut up an entire tomato if you want, but 1/2 was plenty for one generous
serving of this salad.
The next part of the salad if my absolute favorite part, goat cheese. I fell head over heels in love with goat cheese while I was living in France. I ate it almost every day, with baguettes, in salads, off my fingers, etc. I haven’t eaten much since I’ve gotten back, because it can be a but pricey, but it is totally worth it. This one was a good deal from Trader Joe’s, about $3.50 for 5 oz. There is no special way I put it in. Honestly, I just cut off a heath sliver (about 1/5 of the log) and crumbled it between my fingers. Then licked my fingers, not going to lie.
Isn’t she a beauty already?
Next, for some added protein, I added a slice of Boar Head’s Mesquite Turkey I bought at Kroger. I cut it into small chunks and added it to the salad.
For the dressing, I have a special little recipe I picked up in France. Here’s what you need: balsamic vinegar, olive or vegetable oil, spicy brown mustard and chopped garlic. You can also add shallots if you have them, but I forgot to buy them at Kroger!
I used about 11/2 table spoons of oil, 1 tablespoon of balsamic vinegar, a teaspoon of spicy brown mustard and a tiny dollop of garlic. Then mix in a small bowl with a fork.
